Today was one of the most awesome days of the year: I harvested and prepared the first cucumbers of the season! (The rest of the day was so-so, but this made up for it.)
These are Early Russian Cucumbers (though they weren’t particularly all that early) and they are tasty. I decided to make cucumber salad, which I then split up into smaller containers so I can take it to work for lunch or snack over the next couple days. I wasn’t sure what kind of cucumber salad I wanted to make, so I googled around a little and, lo and behold, came upon the blog of one of my favorite garden bloggers (and tweeters), Colleen Vanderlinden of In the Garden Online. Her recipe is almost exactly what I did – I just didn’t include any onions (loathe the texture of onions) and I fudged the quantities a bit since I didn’t feel like dirtying any measuring cups (can you tell how lazy I am when it comes to cooking? This is a major factor in my lack of knowledge in the kitchen).
So what I did was to cut up these six cucumbers and then made a creamy mix of: Miracle Whip, a little salt, a little sugar (not sure that was necessary, but it didn’t hurt), some vinegar, and finally some oregano. I would’ve used dill if I’d had any on hand as I think it would’ve complimented the Miracle Whip nicely. Then I threw the cuke slices in the mix and voila!

The sugar helps cut the tang of the Miracle Whip. Sugar was in a recipe I was given for the dressing that I used to make a broccoli and cauliflower salad for a staff potluck earlier this year.
I got a nice cucumber yesterday and was thinking some sort of salad of it would be good. I’ll have to try what you did!

I’m glad you liked the recipe! I think it’s probably my favorite way to eat cucumbers. But, of course, I’m one of those people who thinks just about everything tastes better with Miracle Whip, so….yeah.

Thank you again for the great recipe, Colleen! I’m also a Miracle Whip fan (can’t resist that tangy zip!). I have some more cukes growing, but no more ready to eat yet. If gardening is good for nothing else, it helps me learn to be patient.
